Turkey and Sea Foam in the Big Rig

IMG_1168We’re staying at Wilderness Lake Campground in Menifee, CA for the next 10 days. This place is big and in addition to lots of campers there are lots of waterfowl. I enjoy waterfowl so honking and quaking in the middle of the night is no biggie for me. This is a great place for our first Thanksgiving in the Big Rig.

Thanksgiving means turkey, and to be safe we transported a frozen turkey breast across the country –  just in case I couldn’t find one to fit my new mini crock pot. As of Wednesday at 4:30 pm that was the only item I had for our Thanksgiving dinner. My plan was simple, quick trip to Walmart to grab Stove Top stuffing, Bob Evan’s potatoes, a jelled cranberry blob for Tom, a pumpkin pie and call it good.

IMG_1191This is an abbreviated and shortcut filled version of our typical Thanksgiving, but given we’re still in shock from our major life change, I figured it was sufficient. When I ran through the menu with my daughter she spotted a glaring omission – Sea Foam Salad. Sea Foam Salad makes an appearance at ALL holiday dinners. It’s a family tradition from the Winterhalter side.

Sea Foam Salad has exactly 4 ingredients, but it does requires a mixer and I don’t have one. I either gave mine away, or stored it. I don’t remember which. By 6:30 pm we were back from Walmart and now the proud owners of a $6 mixer. For $6 bucks you can’t expect much. This thing claims to have 10 speeds. In reality, no matter what speed you select, they’re all the same.

The good news is it worked fine. The Sea Foam was a success, the turkey was moist and our Thanksgiving dinner was yummy. (The pumpkin pie was a colossal disappointment, but oh well.) The three of us filled our plates, took time to give thanks and overate at the picnic table. The bad news is I neglected to take any Thanksgiving pics. Clearly, I have a ways to go on this blogging thing. I promise, I’ll get better.

Thank you for sticking with us.
